  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the gluten-free spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes, until fragrant but not browned.
  3. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the spaghetti.
  4. Add the drained spaghetti to the skillet with the sautéed garlic. Stir in the lemon juice, lemon zest, and half of the reserved pasta water. Toss well to combine, adding more pasta water if needed to create a light sauce.
  5. Season with salt and black pepper to taste. Stir in the chopped parsley and mix until evenly distributed.
