Ingredients

  • Gluten-free spaghetti - 160 grams
  • Extra virgin olive oil - 60 ml
  • Garlic cloves - 4, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil. Add the gluten-free spaghetti and cook according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  4. Stir in the red pepper flakes and cook for an additional 30 seconds.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta water, and then drain the spaghetti.
  6. Add the drained spaghetti to the skillet with the garlic sauce, tossing to coat the pasta evenly.
  7. If the sauce is too dry, add a little reserved pasta water until you reach the desired consistency.
  8. Season with salt, black pepper, fresh parsley, and lemon juice. Toss again to combine.
  9. Serve immediately, garnished with additional parsley if desired.
