  • Spaghetti - 200 grams
  • Green olives, pitted and sliced - 100 grams
  • Cherry tomatoes, halved - 150 grams
  • Garlic, minced - 3 cloves
  • Olive oil - 3 tablespoons
  • Fresh parsley, chopped - 2 tablespoons
  • Red chili flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and red chili flakes to the skillet, sautéing for about 1 minute until fragrant.
  4. Add the halved cherry tomatoes to the skillet and cook for about 3-4 minutes until they start to soften.
  5. Stir in the sliced green olives and cook for an additional 2 minutes.
  6. Once the spaghetti is cooked, reserve 1/2 cup of pasta water, then drain the pasta.
  7. Add the drained spaghetti to the skillet, tossing to combine with the olive and tomato mixture.
  8. If the pasta seems dry, add reserved pasta water a little at a time until you reach your desired consistency.
  9. Season with salt and black pepper to taste, then stir in the chopped parsley before serving.
