- Red pepper flakes - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1 minute until fragrant but not browned.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt and black pepper.
- Once the spaghetti is cooked, reserve 1/2 cup of pasta water and then drain the spaghetti.
- Add the drained spaghetti to the skillet with the spinach, tossing to combine. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
- Stir in the grated Parmesan cheese and lemon juice, mixing well to combine.
- Serve hot, garnished with additional Parmesan cheese if desired.
