  • Olive oil - 2 tablespoons
  • Red pepper flakes - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30 grams, grated
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1 minute until fragrant but not browned.
  4. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt and black pepper.
  5. Once the spaghetti is cooked, reserve 1/2 cup of pasta water and then drain the spaghetti.
  6. Add the drained spaghetti to the skillet with the spinach, tossing to combine. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  7. Stir in the grated Parmesan cheese and lemon juice, mixing well to combine.
