Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add minced garlic and red pepper flakes to the skillet, sautéing until fragrant (about 1-2 minutes) but not browned.
- Add the sliced almonds to the skillet and toast them lightly for about 3-4 minutes, stirring frequently.
- Once the spaghetti is cooked, reserve 1/2 cup of pasta water, then drain the pasta.
- Add the drained spaghetti to the skillet with the garlic and almond mixture.
- Toss the spaghetti with the almond mixture, adding reserved pasta water a little at a time until the desired consistency is reached.
- Stir in the chopped parsley, lemon zest, salt, and black pepper to taste.
- Serve immediately, garnished with extra parsley and almonds if desired.
