Ingredients
- Spaghetti - 200 grams
- Fresh clams - 250 grams
- Extra virgin olive oil - 3 tablespoons
- Garlic - 3 cloves, minced
- White wine - 100 ml
- Fresh parsley - 2 tablespoons, chopped
- Red pepper flakes - 1/2 teaspoon
- Lemon - 1, juiced
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving a cup of the pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
- Add the clams to the skillet and pour in the white wine. Cover the skillet and let the clams steam for about 5-7 minutes, or until they open up. Discard any clams that do not open.
- Add the cooked spaghetti to the skillet with the clams. Toss well to combine, adding reserved pasta water as needed to create a light sauce.
- Stir in the chopped parsley, lemon juice, salt, and black pepper. Cook for an additional 1-2 minutes to warm through.
- Serve immediately, garnished with more parsley and a drizzle of olive oil if desired.
