  • Fresh clams - 250 grams
  • Extra virgin olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • White wine - 100 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/2 teaspoon
  • Lemon - 1, juiced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving a cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
  3. Add the clams to the skillet and pour in the white wine. Cover the skillet and let the clams steam for about 5-7 minutes, or until they open up. Discard any clams that do not open.
  4. Add the cooked spaghetti to the skillet with the clams. Toss well to combine, adding reserved pasta water as needed to create a light sauce.
  5. Stir in the chopped parsley, lemon juice, salt, and black pepper. Cook for an additional 1-2 minutes to warm through.
  6. Serve immediately, garnished with more parsley and a drizzle of olive oil if desired.
