Ingredients

  • Spaghetti - 160 grams
  • Extra virgin olive oil - 60 ml
  • Garlic - 4 cloves, thinly sliced
  • Red pepper flakes - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon zest - 1 teaspoon

Steps

  1. Bring a large pot of salted water to a boil and add the spaghetti. Cook according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large pan over medium heat.
  3. Add the sliced garlic and red pepper flakes to the pan and sauté until the garlic is golden and fragrant, about 2-3 minutes. Be careful not to burn the garlic.
  4. Once the spaghetti is cooked, reserve 1/2 cup of the pasta water and drain the rest.
  5. Add the drained spaghetti to the pan with the garlic oil, tossing to coat. If the dish appears dry, add reserved pasta water a little at a time until desired consistency is reached.
  6. Season with salt, pepper, lemon zest, and chopped parsley. Toss again to combine.
  7. Serve immediately, garnished with additional parsley if desired.
