- Raw cashews - 100 grams

- Smoked paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Mushrooms - 150 grams, sliced
- Vegetable broth - 200 milliliters
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Soak the raw cashews in water for at least 2 hours or overnight. Drain and rinse before use.
- Cook the spaghetti in a pot of salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti and set aside.
- In a blender, combine the soaked cashews, nutritional yeast, garlic, smoked paprika, vegetable broth, lemon juice, salt, and pepper. Blend until smooth and creamy, adding reserved pasta water as needed to reach desired consistency.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the sliced mushrooms to the skillet and cook until browned, about 7-8 minutes. Season with salt and pepper.
- Lower the heat and pour the cashew cream sauce into the skillet, stirring to combine with the mushrooms and onions. Let it simmer for 2-3 minutes.
- Add the cooked spaghetti to the skillet, tossing to coat the pasta in the sauce. Cook for an additional 1-2 minutes until heated through.
