  • Green peas - 100 grams
  • Canned tuna in water - 100 grams, drained
  • Olives - 50 grams, pitted and chopped
  • Greek yogurt - 3 tablespoons
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Peel the potatoes and carrots, then dice them into small cubes.
  2. In a large pot, bring water to a boil and add the diced potatoes and carrots. Cook for about 10-12 minutes until tender, then add the green peas for the last 2 minutes. Drain and let cool.
  3. In a mixing bowl, combine the cooled potatoes, carrots, and peas with the drained tuna and chopped olives.
  4. In a separate small bowl, whisk together the Greek yogurt, olive oil, lemon juice, salt, and black pepper until smooth.
  5. Pour the dressing over the vegetable and tuna mixture, and gently stir until everything is well coated.
