Ingredients

  • Potatoes - 200 grams
  • Carrots - 100 grams
  • Green peas - 100 grams (frozen or fresh)
  • Red bell pepper - 50 grams, diced
  • Cucumber - 50 grams, diced
  • Olives - 30 grams, sliced
  • Olive oil - 2 tablespoons
  • Apple cider vinegar - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Peel and dice the potatoes and carrots into small cubes.
  2. In a pot, boil water and add the diced potatoes and carrots. Cook for about 10-12 minutes until tender but not mushy. Add the green peas for the last 2 minutes of cooking.
  3. Drain the vegetables and let them cool in a large mixing bowl.
  4. Once cooled, add the diced red bell pepper, cucumber, and sliced olives to the bowl with the vegetables.
  5. In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and black pepper to create the dressing.
  6. Pour the dressing over the vegetable mixture and toss gently to combine.
  7. Sprinkle chopped fresh parsley on top before serving.
  8. Serve chilled or at room temperature.
