- Potatoes - 200 grams
- Carrots - 100 grams
- Green peas - 100 grams (frozen or fresh)
- Red bell pepper - 50 grams, diced
- Cucumber - 50 grams, diced
- Olives - 30 grams, sliced
- Olive oil - 2 tablespoons
- Apple cider vinegar - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped
Steps
- Peel and dice the potatoes and carrots into small cubes.
- In a pot, boil water and add the diced potatoes and carrots. Cook for about 10-12 minutes until tender but not mushy. Add the green peas for the last 2 minutes of cooking.
- Drain the vegetables and let them cool in a large mixing bowl.
- Once cooled, add the diced red bell pepper, cucumber, and sliced olives to the bowl with the vegetables.
- In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and black pepper to create the dressing.
- Pour the dressing over the vegetable mixture and toss gently to combine.
