- Cherry tomatoes - 100 grams, halved

- Feta cheese - 50 grams, crumbled
- Balsamic vinegar - 1 tablespoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat a grill pan or skillet over medium heat.
- In a bowl, mix olive oil, garlic powder, paprika, salt, and black pepper.
- Coat the chicken breast with the seasoning mixture.
- Grill the chicken for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 75°C.
- While the chicken is cooking, prepare the salad by combining mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese in a large bowl.
- In a small bowl, whisk together balsamic vinegar, lemon juice, and a pinch of salt and pepper to make the dressing.
- Once the chicken is cooked, let it rest for a couple of minutes, then slice it into strips.
- Top the salad with the sliced chicken and drizzle with the dressing.
- Garnish with fresh parsley and serve immediately.
