- Cucumber - 100 grams
- Red bell pepper - 50 grams
- Red onion - 30 grams
- Olives (green or black) - 50 grams
- Extra virgin olive oil - 2 tablespoons
- Red wine vinegar - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley (for garnish) - a handful
Steps
- Preheat your grill or grill pan to medium-high heat.
- Season the chicken breast with salt, pepper, and a drizzle of olive oil.
- Grill the chicken for about 6-7 minutes on each side or until fully cooked and juices run clear. Remove from heat and let it rest for 5 minutes before slicing.
- While the chicken is grilling, wash and prepare the salad ingredients: chop the salad greens, halve the cherry tomatoes, slice the cucumber, and thinly slice the red bell pepper and red onion.
- In a large mixing bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red bell pepper, red onion, and olives.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to make the dressing.
- Slice the grilled chicken into strips and add it to the salad bowl.
- Pour the dressing over the salad and toss gently to combine all ingredients.
- Garnish with fresh parsley before serving.
