Ingredients

  • Grilled chicken breast - 200 grams

  • Cherry tomatoes - 100 grams
  • Cucumber - 100 grams
  • Red bell pepper - 50 grams
  • Red onion - 30 grams
  • Olives (green or black) - 50 grams
  • Extra virgin olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (for garnish) - a handful

Steps

  1. Preheat your grill or grill pan to medium-high heat.
  2. Season the chicken breast with salt, pepper, and a drizzle of olive oil.
  3. Grill the chicken for about 6-7 minutes on each side or until fully cooked and juices run clear. Remove from heat and let it rest for 5 minutes before slicing.
  4. While the chicken is grilling, wash and prepare the salad ingredients: chop the salad greens, halve the cherry tomatoes, slice the cucumber, and thinly slice the red bell pepper and red onion.
  5. In a large mixing bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red bell pepper, red onion, and olives.
  6. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to make the dressing.
  7. Slice the grilled chicken into strips and add it to the salad bowl.
  8. Pour the dressing over the salad and toss gently to combine all ingredients.
  9. Garnish with fresh parsley before serving.
