Ingredients

  • Feta cheese - 100 grams, crumbled
  • Extra virgin olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the bell peppers in half and remove the seeds and stems.
  3. Place the halved peppers on a baking sheet, cut side down, and roast in the oven for 20 minutes, or until the skins are blistered and charred.
  4. Remove the peppers from the oven and place them in a bowl covered with plastic wrap for 10 minutes to steam.
  5. Once cooled, peel the skins off the peppers and slice them into strips.
  6. In a large bowl, combine the roasted pepper strips, crumbled feta cheese, minced garlic, and chopped parsley.
  7. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.
  8. Pour the dressing over the salad and toss gently to combine.
