- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Cut the bell peppers in half and remove the seeds and stems.
- Place the halved peppers on a baking sheet, cut side down, and roast in the oven for 20 minutes, or until the skins are blistered and charred.
- Remove the peppers from the oven and place them in a bowl covered with plastic wrap for 10 minutes to steam.
- Once cooled, peel the skins off the peppers and slice them into strips.
- In a large bowl, combine the roasted pepper strips, crumbled feta cheese, minced garlic, and chopped parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.
- Pour the dressing over the salad and toss gently to combine.
