Ingredients

  • Red bell pepper - 1 large
  • Yellow bell pepper - 1 large
  • Garlic - 2 cloves, minced
  • Extra virgin olive oil - 3 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Capers - 1 tablespoon, rinsed
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the red and yellow bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet.
  3. Roast the peppers in the preheated oven for 20-25 minutes, or until the skins are blistered and charred.
  4. Remove the peppers from the oven and place them in a bowl covered with plastic wrap for 10 minutes to steam.
  5. After steaming, peel the skins off the peppers and slice them into strips.
  6. In a mixing bowl, combine the minced garlic, olive oil, red wine vinegar, salt, and black pepper to make the dressing.
  7. Add the roasted pepper strips, chopped parsley, and capers to the bowl, and toss gently to coat everything in the dressing.
  8. Serve the salad at room temperature, topped with crumbled feta cheese if desired.
