- Red bell pepper - 1 large
- Yellow bell pepper - 1 large
- Garlic - 2 cloves, minced
- Extra virgin olive oil - 3 tablespoons
- Red wine vinegar - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Capers - 1 tablespoon, rinsed
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Cut the red and yellow bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet.
- Roast the peppers in the preheated oven for 20-25 minutes, or until the skins are blistered and charred.
- Remove the peppers from the oven and place them in a bowl covered with plastic wrap for 10 minutes to steam.
- After steaming, peel the skins off the peppers and slice them into strips.
- In a mixing bowl, combine the minced garlic, olive oil, red wine vinegar, salt, and black pepper to make the dressing.
- Add the roasted pepper strips, chopped parsley, and capers to the bowl, and toss gently to coat everything in the dressing.
- Serve the salad at room temperature, topped with crumbled feta cheese if desired.
