Ingredients

  • Potatoes - 400 grams

  • Red onion - 1 small, finely chopped
  • Black olives - 50 grams, sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 3 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash and peel the potatoes, then cut them into bite-sized cubes.
  2. In a large pot, bring salted water to a boil and add the potato cubes. Cook for about 15 minutes or until tender but firm. Drain and let cool.
  3. In a large bowl, combine the diced red bell pepper, cucumber, red onion, and black olives.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and black pepper to create the dressing.
  5. Once the potatoes are cool, add them to the bowl with the vegetables and pour the dressing over the top.
  6. Gently toss everything together until well combined. Adjust seasoning if needed.
