- Potatoes - 400 grams

- Black olives - 50 grams, sliced
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 3 tablespoons
- Red wine vinegar - 1 tablespoon
- Garlic powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Wash and peel the potatoes, then cut them into bite-sized cubes.
- In a large pot, bring salted water to a boil and add the potato cubes. Cook for about 15 minutes or until tender but firm. Drain and let cool.
- In a large bowl, combine the diced red bell pepper, cucumber, red onion, and black olives.
- In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and black pepper to create the dressing.
- Once the potatoes are cool, add them to the bowl with the vegetables and pour the dressing over the top.
