  • Lime juice - 30 ml
  • Olive oil - 15 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Avocado - 1 medium, diced

Steps

  1. In a medium pot, bring water to a boil and add the fresh corn kernels. Cook for 5 minutes until tender, then drain and let cool.
  2. In a mixing bowl, combine the diced red bell pepper, finely chopped red onion, and chopped cilantro.
  3. Add the cooled corn to the mixing bowl, then drizzle with lime juice and olive oil.
