- Eggs - 4 large
- Tomato - 150 grams, diced
- Cucumber - 100 grams, diced
- Red onion - 50 grams, finely chopped
- Olives - 50 grams, pitted and sliced
- Green bell pepper - 100 grams, diced
- Olive oil - 2 tablespoons
- Red wine vinegar - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Place the eggs in a saucepan and cover with water. Bring to a boil over medium heat, then reduce heat to low and simmer for 10 minutes.
- Remove the eggs from the boiling water and place them in a bowl of ice water to cool for 5 minutes.
- Once cooled, peel the eggs and chop them into quarters.
- In a large mixing bowl, combine the diced tomato, cucumber, red onion, olives, and green bell pepper.
- Add the chopped eggs to the mixing bowl.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.
- Pour the dressing over the salad and gently toss to combine all the ingredients.
- Garnish with chopped fresh parsley before serving.
