Ingredients

  • Eggs - 4 large
  • Tomato - 150 grams, diced
  • Cucumber - 100 grams, diced
  • Red onion - 50 grams, finely chopped
  • Olives - 50 grams, pitted and sliced
  • Green bell pepper - 100 grams, diced
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Place the eggs in a saucepan and cover with water. Bring to a boil over medium heat, then reduce heat to low and simmer for 10 minutes.
  2. Remove the eggs from the boiling water and place them in a bowl of ice water to cool for 5 minutes.
  3. Once cooled, peel the eggs and chop them into quarters.
  4. In a large mixing bowl, combine the diced tomato, cucumber, red onion, olives, and green bell pepper.
  5. Add the chopped eggs to the mixing bowl.
  6. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.
  7. Pour the dressing over the salad and gently toss to combine all the ingredients.
  8. Garnish with chopped fresh parsley before serving.
