Ingredients

  • Mixed nuts (almonds, walnuts, hazelnuts) - 100g
  • Pumpkin seeds - 30g
  • Spinach leaves - 100g
  • Cherry tomatoes - 150g
  • Cucumber - 1 medium (about 150g)
  • Red onion - 1 small (about 50g)
  • Feta cheese - 50g
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Spread the mixed nuts and pumpkin seeds on a baking tray and roast for 8-10 minutes until golden brown, stirring halfway through.
  3. While the nuts and seeds are roasting, wash and dry the spinach leaves, then place them in a large salad bowl.
  4. Halve the cherry tomatoes and dice the cucumber and red onion, then add them to the salad bowl with the spinach.
  5. Once the nuts and seeds are done roasting, allow them to cool slightly before adding them to the salad bowl.
  6. Crumble the feta cheese over the top of the salad.
  7. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper to create the dressing.
  8. Drizzle the dressing over the salad and toss gently to combine all ingredients.
  9. Serve immediately or refrigerate for up to 30 minutes before serving for enhanced flavors.
