Ingredients

  • Asparagus - 200 grams
  • Cherry tomatoes - 150 grams
  • Red onion - 50 grams
  • Extra virgin olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Begin by washing the asparagus under cold water. Trim the tough ends and set aside.
  2. Bring a pot of salted water to a boil. Blanch the asparagus for about 2-3 minutes until bright green and tender-crisp.
  3. Remove the asparagus and immediately plunge them into a bowl of ice water to stop the cooking process. Let them cool for a few minutes, then drain and pat dry.
  4. While the asparagus cools, slice the cherry tomatoes in half and thinly slice the red onion.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create the vinaigrette.
  6. In a salad bowl, combine the cooled asparagus, cherry tomatoes, red onion, and fresh parsley. Drizzle with the vinaigrette and toss gently to combine.
  7. If desired, sprinkle the crumbled feta cheese on top before serving.
