Ingredients
- Asparagus - 200 grams
- Cherry tomatoes - 150 grams
- Red onion - 50 grams
- Extra virgin olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Begin by washing the asparagus under cold water. Trim the tough ends and set aside.
- Bring a pot of salted water to a boil. Blanch the asparagus for about 2-3 minutes until bright green and tender-crisp.
- Remove the asparagus and immediately plunge them into a bowl of ice water to stop the cooking process. Let them cool for a few minutes, then drain and pat dry.
- While the asparagus cools, slice the cherry tomatoes in half and thinly slice the red onion.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create the vinaigrette.
- In a salad bowl, combine the cooled asparagus, cherry tomatoes, red onion, and fresh parsley. Drizzle with the vinaigrette and toss gently to combine.
- If desired, sprinkle the crumbled feta cheese on top before serving.
