  • Cucumber - 100 grams, diced
  • Red bell pepper - 50 grams, diced
  • Chickpeas - 100 grams, canned and drained
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 15 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, combine the couscous and boiling water, cover with a lid, and let it sit for 5 minutes until the water is absorbed.
  2. Fluff the couscous with a fork and let it cool to room temperature.
