- Couscous - 100 grams
- Water - 200 milliliters
- Cherry tomatoes - 100 grams, halved
- Cucumber - 100 grams, diced
- Red bell pepper - 50 grams, diced
- Red onion - 30 grams, finely chopped
- Fresh parsley - 20 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- In a saucepan, bring 200 milliliters of water to a boil.
- Add 100 grams of couscous, cover the saucepan, and remove it from heat. Let it sit for 5 minutes to absorb the water.
- Fluff the couscous with a fork and let it cool slightly.
- In a large bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, finely chopped red onion, and chopped fresh parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Add the couscous to the vegetable mixture and pour the dressing over it. Toss everything together until evenly combined.
- If using, sprinkle crumbled feta cheese on top before serving.
