Ingredients

  • Couscous - 100 grams
  • Water - 200 milliliters
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 100 grams, diced
  • Red bell pepper - 50 grams, diced
  • Red onion - 30 grams, finely chopped
  • Fresh parsley - 20 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. In a saucepan, bring 200 milliliters of water to a boil.
  2. Add 100 grams of couscous, cover the saucepan, and remove it from heat. Let it sit for 5 minutes to absorb the water.
  3. Fluff the couscous with a fork and let it cool slightly.
  4. In a large bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, finely chopped red onion, and chopped fresh parsley.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  6. Add the couscous to the vegetable mixture and pour the dressing over it. Toss everything together until evenly combined.
  7. If using, sprinkle crumbled feta cheese on top before serving.
