  • Hard-boiled eggs - 2, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Begin by hard-boiling the eggs. Place them in a saucepan, cover with water, and bring to a boil. Once boiling, reduce heat to low and let simmer for 9-10 minutes. Remove from heat, cool in cold water, and peel.
  2. In a mixing bowl, combine the canned tuna (drained), halved cherry tomatoes, diced cucumber, finely chopped red onion, and chopped hard-boiled eggs.
