  • Red onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then cook it according to package instructions in a pot of salted water until tender, about 30 minutes.
  2. While the rice is cooking, chop the red bell pepper, cucumber, cherry tomatoes, and red onion. Place them in a large mixing bowl.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and black pepper to make the dressing.
