- Cherry tomatoes - 150 grams, halved
- Red onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Red wine vinegar - 1 tablespoon
- Garlic - 1 clove, minced
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the brown rice under cold water until the water runs clear, then cook it according to package instructions in a pot of salted water until tender, about 30 minutes.
- While the rice is cooking, chop the red bell pepper, cucumber, cherry tomatoes, and red onion. Place them in a large mixing bowl.
- In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and black pepper to make the dressing.
- Once the rice is cooked, drain and let it cool for a few minutes before adding it to the mixing bowl with the chopped vegetables.
