Steps
- Rinse the clams under cold water to remove any sand or debris.
- In a pot, bring water to a boil and add the clams. Cook for 5-7 minutes until they open. Discard any that do not open.
- Remove the clams from the pot and let them cool. Once cool, remove the meat from the shells and chop into bite-sized pieces.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Add the chopped clams to the vegetable mixture and pour the dressing over. Toss gently to combine.
- Serve immediately, garnished with additional parsley if desired.
