Ingredients

  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the clams under cold water to remove any sand or debris.
  2. In a pot, bring water to a boil and add the clams. Cook for 5-7 minutes until they open. Discard any that do not open.
  3. Remove the clams from the pot and let them cool. Once cool, remove the meat from the shells and chop into bite-sized pieces.
  4. In a large bowl, combine the cherry tomatoes, cucumber, red onion, and parsley.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  6. Add the chopped clams to the vegetable mixture and pour the dressing over. Toss gently to combine.
  7. Serve immediately, garnished with additional parsley if desired.
