Ingredients
- Almond flour - 150g
- Coconut flour - 30g
- Eggs - 2 large
- Olive oil - 50ml
- Baking powder - 1 tsp
- Salt - 1/2 tsp
- Canned tuna in olive oil - 150g, drained
- Green olives - 50g, chopped
- Red bell pepper - 50g, finely diced
- Onion - 30g, finely chopped
- Garlic - 1 clove, minced
- Paprika - 1/2 tsp
- Black pepper - 1/4 tsp
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt.
- In another bowl, whisk together the eggs and olive oil until well combined.
- Gradually add the egg mixture to the flour mixture, stirring until a dough forms. If it's too sticky, add a bit more almond flour.
- Wrap the dough in plastic wrap and refrigerate for 15 minutes.
- In a skillet, heat a small amount of olive oil over medium heat. Sauté the onion and garlic until translucent.
- Add the red bell pepper, chopped olives, drained tuna, paprika, and black pepper to the skillet. Cook for 5-7 minutes until heated through. Remove from heat and let cool.
- On a floured surface, roll out the chilled dough to about 3mm thick. Cut out circles using a round cutter (about 10cm in diameter).
- Place a spoonful of the tuna filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal.
- Place the empanadillas on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
