Ingredients

  • Almond flour - 150g
  • Coconut flour - 30g
  • Eggs - 2 large
  • Olive oil - 50ml
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Canned tuna in olive oil - 150g, drained
  • Green olives - 50g, chopped
  • Red bell pepper - 50g, finely diced
  • Onion - 30g, finely chopped
  • Garlic - 1 clove, minced
  • Paprika - 1/2 tsp
  • Black pepper - 1/4 tsp

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt.
  3. In another bowl, whisk together the eggs and olive oil until well combined.
  4. Gradually add the egg mixture to the flour mixture, stirring until a dough forms. If it's too sticky, add a bit more almond flour.
  5. Wrap the dough in plastic wrap and refrigerate for 15 minutes.
  6. In a skillet, heat a small amount of olive oil over medium heat. Sauté the onion and garlic until translucent.
  7. Add the red bell pepper, chopped olives, drained tuna, paprika, and black pepper to the skillet. Cook for 5-7 minutes until heated through. Remove from heat and let cool.
  8. On a floured surface, roll out the chilled dough to about 3mm thick. Cut out circles using a round cutter (about 10cm in diameter).
  9. Place a spoonful of the tuna filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal.
  10. Place the empanadillas on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
