- All-purpose flour - 200 grams
- Salt - 1 teaspoon
- Olive oil - 50 milliliters
- Water - 75 milliliters
- Spinach - 100 grams, chopped
- Onion - 1 medium, finely chopped
- Red bell pepper - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Chickpeas - 100 grams, cooked and mashed
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Black pepper - to taste
- Olive oil (for sautéing) - 1 tablespoon
Steps
- In a large bowl, mix the flour and salt. Add the olive oil and water, and knead the dough until smooth. Cover and let it rest for 30 minutes.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic, and sauté until soft.
- Add the red bell pepper and spinach to the skillet, cooking until the spinach is wilted. Stir in the mashed chickpeas, smoked paprika, cumin, and black pepper. Cook for an additional 5 minutes, then remove from heat and let cool.
- Preheat the oven to 200°C (400°F).
- Divide the rested dough into 4 equal pieces. Roll each piece into a circle about 1/4 inch thick.
- Place a spoonful of the filling on one half of each dough circle. Fold the other half over and seal the edges by pressing with a fork.
- Place the empanadas on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown.
