Ingredients

  • All-purpose flour - 200 grams
  • Olive oil - 60 ml
  • Warm water - 100 ml
  • Salt - 1/2 teaspoon
  • Fresh spinach - 200 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Nutritional yeast - 2 tablespoons
  • Black pepper - 1/4 teaspoon
  • Cumin powder - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a mixing bowl, combine the flour and salt. Add olive oil and mix until crumbly, then gradually add warm water until the dough forms. Knead for about 5 minutes until smooth, then cover and let it rest for 15 minutes.
  2. In a skillet, heat a tablespoon of olive oil over medium heat. Sauté the onion until translucent, then add garlic and cook for another minute.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Stir in nutritional yeast, black pepper, cumin, and lemon juice. Mix well, then remove from heat and let it cool.
  4. Preheat the oven to 200°C (400°F). Roll out the rested dough on a floured surface until thin. Cut into circles about 10 cm in diameter.
  5. Place a spoonful of the spinach mixture onto one half of each dough circle. Fold the other half over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative finish.
  6. Place the empanadas on a baking sheet lined with parchment paper. Brush the tops lightly with olive oil.
  7. Bake for 20-25 minutes until golden brown. Serve warm.
