Ingredients
- All-purpose flour - 200 grams
- Olive oil - 60 ml
- Warm water - 100 ml
- Salt - 1/2 teaspoon
- Fresh spinach - 200 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Nutritional yeast - 2 tablespoons
- Black pepper - 1/4 teaspoon
- Cumin powder - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- In a mixing bowl, combine the flour and salt. Add olive oil and mix until crumbly, then gradually add warm water until the dough forms. Knead for about 5 minutes until smooth, then cover and let it rest for 15 minutes.
- In a skillet, heat a tablespoon of olive oil over medium heat. Sauté the onion until translucent, then add garlic and cook for another minute.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Stir in nutritional yeast, black pepper, cumin, and lemon juice. Mix well, then remove from heat and let it cool.
- Preheat the oven to 200°C (400°F). Roll out the rested dough on a floured surface until thin. Cut into circles about 10 cm in diameter.
- Place a spoonful of the spinach mixture onto one half of each dough circle. Fold the other half over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative finish.
- Place the empanadas on a baking sheet lined with parchment paper. Brush the tops lightly with olive oil.
- Bake for 20-25 minutes until golden brown. Serve warm.
