Ingredients
- All-purpose flour - 250 grams
- Unsalted butter - 100 grams, cold and cubed
- Salt - 1 teaspoon
- Cold water - 100 ml
- Ground beef - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 small, finely chopped
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Egg - 1, for egg wash
Steps
- In a large bowl, mix the flour and salt. Add the cold butter and rub it into the flour until the mixture resembles breadcrumbs.
- Gradually add the cold water, mixing until a dough forms. Shape into a ball, wrap in plastic, and refrigerate for 30 minutes.
- In a skillet, heat a bit of oil over medium heat. Sauté the chopped onion and garlic until translucent.
- Add the ground beef and cook until browned. Stir in the bell pepper, paprika, cumin, black pepper, and salt. Cook for another 5 minutes, then remove from heat and stir in the chopped parsley.
- Preheat your BBQ grill to medium heat.
- Roll out the chilled dough on a floured surface to about 3 mm thick. Cut into circles (about 10 cm in diameter).
- Place a spoonful of the beef mixture on one half of each circle. Fold over and seal the edges by pressing with a fork.
- Beat the egg and brush it over the top of each empanada.
- Place the empanadas on the grill and cook for about 15-20 minutes, turning halfway, until golden brown.
