Ingredients

  • All-purpose flour - 250 grams
  • Unsalted butter - 100 grams, cold and cubed
  • Salt - 1 teaspoon
  • Cold water - 100 ml
  • Ground beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 small, finely chopped
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Egg - 1, for egg wash

Steps

  1. In a large bowl, mix the flour and salt. Add the cold butter and rub it into the flour until the mixture resembles breadcrumbs.
  2. Gradually add the cold water, mixing until a dough forms. Shape into a ball, wrap in plastic, and refrigerate for 30 minutes.
  3. In a skillet, heat a bit of oil over medium heat. Sauté the chopped onion and garlic until translucent.
  4. Add the ground beef and cook until browned. Stir in the bell pepper, paprika, cumin, black pepper, and salt. Cook for another 5 minutes, then remove from heat and stir in the chopped parsley.
  5. Preheat your BBQ grill to medium heat.
  6. Roll out the chilled dough on a floured surface to about 3 mm thick. Cut into circles (about 10 cm in diameter).
  7. Place a spoonful of the beef mixture on one half of each circle. Fold over and seal the edges by pressing with a fork.
  8. Beat the egg and brush it over the top of each empanada.
  9. Place the empanadas on the grill and cook for about 15-20 minutes, turning halfway, until golden brown.
