Ingredients
- All-purpose flour - 200 grams
- Salt - 1/2 teaspoon
- Unsalted butter - 60 grams (cold, diced)
- Water - 60 ml (cold)
- Canned tuna in olive oil - 150 grams (drained)
- Red bell pepper - 1/2 (finely chopped)
- Green onions - 2 (finely chopped)
- Egg - 1 (beaten, for egg wash)
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
- Parsley - 1 tablespoon (chopped)
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Add the cold diced butter and mix until the mixture resembles coarse crumbs.
- Gradually add the cold water, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- In another bowl, combine the drained tuna, chopped red bell pepper, green onions, black pepper, paprika, and parsley. Mix well to combine.
- Preheat the oven to 200°C (400°F).
- On a lightly floured surface, roll out the dough to about 3 mm thick. Cut out circles using a 10 cm diameter cutter.
- Place a spoonful of the tuna mixture in the center of each circle. Fold the dough over to create a half-moon shape and crimp the edges to seal.
- Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
- Bake in the preheated oven for 15-20 minutes, or until golden brown.
