Ingredients

  • All-purpose flour - 200 grams
  • Salt - 1/2 teaspoon
  • Unsalted butter - 60 grams (cold, diced)
  • Water - 60 ml (cold)
  • Canned tuna in olive oil - 150 grams (drained)
  • Red bell pepper - 1/2 (finely chopped)
  • Green onions - 2 (finely chopped)
  • Egg - 1 (beaten, for egg wash)
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Parsley - 1 tablespoon (chopped)

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Add the cold diced butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add the cold water, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  3. In another bowl, combine the drained tuna, chopped red bell pepper, green onions, black pepper, paprika, and parsley. Mix well to combine.
  4. Preheat the oven to 200°C (400°F).
  5. On a lightly floured surface, roll out the dough to about 3 mm thick. Cut out circles using a 10 cm diameter cutter.
  6. Place a spoonful of the tuna mixture in the center of each circle. Fold the dough over to create a half-moon shape and crimp the edges to seal.
  7. Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
  8. Bake in the preheated oven for 15-20 minutes, or until golden brown.
