- All-purpose flour - 300g
- Olive oil - 75ml
- Water - 100ml
- Salt - 1 tsp
- Bell pepper (red) - 1 medium, diced
- Onion - 1 medium, diced
- Spinach - 150g, chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Paprika - 1 tsp
- Cumin - 1/2 tsp
- Black pepper - 1/2 tsp
- Feta cheese - 100g, crumbled
- Egg - 1, beaten (for egg wash)
Steps
- In a mixing bowl, combine the flour and salt. Make a well in the center and add olive oil and water. Mix until a dough forms and knead for about 5 minutes. Wrap in plastic wrap and let it rest for 30 minutes.
- In a skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 5 minutes. Add minced garlic and cook for another minute.
- Stir in the chopped spinach and diced tomato, cooking until the spinach wilts. Season with paprika, cumin, black pepper, and salt to taste. Remove from heat and let the filling cool slightly.
- Once the dough has rested, divide it into two equal portions. Roll out each portion on a floured surface into a circle about 1/4 inch thick.
- Place half of the vegetable filling on one half of each dough circle, leaving a border. Sprinkle crumbled feta cheese over the filling.
- Fold the dough over to cover the filling, sealing the edges by crimping with a fork. Place the empanadas on a baking sheet lined with parchment paper.
- Brush the tops of the empanadas with beaten egg to give them a golden color while baking.
- Preheat the oven to 200°C (400°F) and bake the empanadas for 25-30 minutes or until golden brown. Serve warm.
