Ingredients

  • Heavy cream - 240 ml
  • Unsweetened almond milk - 120 ml
  • Erythritol - 50 g
  • Butter - 30 g
  • Vanilla extract - 1 tsp
  • Baking soda - 1/4 tsp
  • Salt - a pinch

Steps

  1. In a medium saucepan, combine the heavy cream, unsweetened almond milk, and erythritol over medium heat.
  2. Stir the mixture continuously until the erythritol is fully dissolved and the mixture begins to simmer.
  3. Add the butter, baking soda, vanilla extract, and a pinch of salt to the saucepan.
  4. Reduce the heat to low and continue to stir the mixture for about 20 minutes, or until it thickens and turns a caramel color.
  5. Remove from heat and let it cool for a few minutes before transferring to a glass jar or container.
  6. Allow the dulce de leche to cool completely before refrigerating. It will thicken further as it cools.
