Ingredients

  • Couscous - 150 grams
  • Water - 250 ml
  • Red bell pepper - 1 (diced)
  • Zucchini - 1 (sliced)
  • Eggplant - 1/2 (diced)
  • Cherry tomatoes - 150 grams (halved)
  • Olive oil - 2 tablespoons
  • Lemon - 1 (juiced and zested)
  • Garlic - 2 cloves (minced)
  • Fresh parsley - 2 tablespoons (chopped)
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon

Steps

  1. Preheat the BBQ grill to medium-high heat.
  2. In a saucepan, bring the water to a boil, add a pinch of salt, and stir in the couscous. Remove from heat, cover, and let it sit for 5 minutes.
  3. While the couscous is cooking, toss the diced red bell pepper, zucchini, eggplant, and cherry tomatoes in a bowl with olive oil, minced garlic, paprika, cumin, salt, and black pepper.
  4. Place the seasoned vegetables on the BBQ grill. Grill for about 8-10 minutes, turning occasionally until they are tender and have grill marks.
  5. Fluff the couscous with a fork and mix in the lemon juice, lemon zest, and chopped parsley.
  6. Once the vegetables are done, remove them from the grill and gently fold them into the couscous mixture.
  7. Serve warm, garnished with additional parsley and a drizzle of olive oil if desired.
