- Couscous - 150 grams
- Water - 250 ml
- Red bell pepper - 1 (diced)
- Zucchini - 1 (sliced)
- Eggplant - 1/2 (diced)
- Cherry tomatoes - 150 grams (halved)
- Olive oil - 2 tablespoons
- Lemon - 1 (juiced and zested)
- Garlic - 2 cloves (minced)
- Fresh parsley - 2 tablespoons (chopped)
- Salt - to taste
- Black pepper - to taste
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
Steps
- Preheat the BBQ grill to medium-high heat.
- In a saucepan, bring the water to a boil, add a pinch of salt, and stir in the couscous. Remove from heat, cover, and let it sit for 5 minutes.
- While the couscous is cooking, toss the diced red bell pepper, zucchini, eggplant, and cherry tomatoes in a bowl with olive oil, minced garlic, paprika, cumin, salt, and black pepper.
- Place the seasoned vegetables on the BBQ grill. Grill for about 8-10 minutes, turning occasionally until they are tender and have grill marks.
- Fluff the couscous with a fork and mix in the lemon juice, lemon zest, and chopped parsley.
- Once the vegetables are done, remove them from the grill and gently fold them into the couscous mixture.
- Serve warm, garnished with additional parsley and a drizzle of olive oil if desired.
