Ingredients

  • All-purpose flour - 50 grams
  • Vegetable broth - 200 ml
  • Milk - 100 ml
  • Nutmeg - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Breadcrumbs - 100 grams
  • Egg - 1, beaten
  • Parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Heat the olive oil and butter in a pan over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent.
  2. Add the chopped mushrooms to the pan, cooking until they release their moisture and become golden brown. Season with salt, pepper, and nutmeg.
  3. Stir in the flour and cook for 1-2 minutes, then gradually add the vegetable broth and milk, stirring continuously to avoid lumps. Cook until the mixture thickens and becomes a paste.
  4. Remove the mixture from heat and transfer it to a bowl. Let it cool completely in the refrigerator for at least 30 minutes.
  5. Once cooled, shape the mixture into small balls or oval shapes.
  6. Dip each croqueta in the beaten egg, then roll in breadcrumbs to coat evenly.
  7. Heat oil in a frying pan over medium heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side.
  8. Remove the croquetas and drain on paper towels. Serve hot, garnished with chopped parsley.
