- All-purpose flour - 50 grams
- Vegetable broth - 200 ml
- Milk - 100 ml
- Nutmeg - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Breadcrumbs - 100 grams
- Egg - 1, beaten
- Parsley - 1 tablespoon, chopped (for garnish)
Steps
- Heat the olive oil and butter in a pan over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent.
- Add the chopped mushrooms to the pan, cooking until they release their moisture and become golden brown. Season with salt, pepper, and nutmeg.
- Stir in the flour and cook for 1-2 minutes, then gradually add the vegetable broth and milk, stirring continuously to avoid lumps. Cook until the mixture thickens and becomes a paste.
- Remove the mixture from heat and transfer it to a bowl. Let it cool completely in the refrigerator for at least 30 minutes.
- Once cooled, shape the mixture into small balls or oval shapes.
- Dip each croqueta in the beaten egg, then roll in breadcrumbs to coat evenly.
- Heat oil in a frying pan over medium heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove the croquetas and drain on paper towels. Serve hot, garnished with chopped parsley.
