Ingredients
- Fresh spinach - 200 grams
- Potato - 200 grams
- All-purpose flour - 50 grams
- Nutritional yeast - 2 tablespoons
- Garlic - 2 cloves
- Onion - 1 small
- Plant-based milk - 100 ml
- Olive oil - 2 tablespoons (for cooking)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Breadcrumbs - 100 grams
- Oil for frying - as needed
Steps
- Wash the spinach thoroughly, then steam or sauté it until wilted. Set aside to cool.
- Peel and boil the potato in salted water until tender, about 15 minutes. Drain and mash until smooth.
- Finely chop the onion and garlic, then sauté them in a pan with olive oil until translucent.
- In a large mixing bowl, combine the mashed potato, sautéed onion and garlic, wilted spinach, nutritional yeast, flour, plant-based milk, salt, and black pepper. Mix until well combined.
- Form the mixture into small, oval-shaped croquettes, about the size of a golf ball.
- Roll each croquette in breadcrumbs until fully coated.
- Heat oil in a frying pan over medium heat. Fry the croquettes in batches until golden brown, about 3-4 minutes on each side. Drain on paper towels.
- Serve warm with your favorite dipping sauce.
