Ingredients

  • Fresh spinach - 200 grams
  • Potato - 200 grams
  • All-purpose flour - 50 grams
  • Nutritional yeast - 2 tablespoons
  • Garlic - 2 cloves
  • Onion - 1 small
  • Plant-based milk - 100 ml
  • Olive oil - 2 tablespoons (for cooking)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Breadcrumbs - 100 grams
  • Oil for frying - as needed

Steps

  1. Wash the spinach thoroughly, then steam or sauté it until wilted. Set aside to cool.
  2. Peel and boil the potato in salted water until tender, about 15 minutes. Drain and mash until smooth.
  3. Finely chop the onion and garlic, then sauté them in a pan with olive oil until translucent.
  4. In a large mixing bowl, combine the mashed potato, sautéed onion and garlic, wilted spinach, nutritional yeast, flour, plant-based milk, salt, and black pepper. Mix until well combined.
  5. Form the mixture into small, oval-shaped croquettes, about the size of a golf ball.
  6. Roll each croquette in breadcrumbs until fully coated.
  7. Heat oil in a frying pan over medium heat. Fry the croquettes in batches until golden brown, about 3-4 minutes on each side. Drain on paper towels.
  8. Serve warm with your favorite dipping sauce.
