Ingredients

  • coconut milk - 400 ml
  • cornstarch - 40 g
  • sugar - 80 g
  • vanilla extract - 1 tsp
  • lemon zest - 1 tsp
  • orange zest - 1 tsp
  • cinnamon stick - 1
  • brown sugar - 2 tbsp

Steps

  1. In a saucepan, combine the coconut milk, sugar, lemon zest, orange zest, and the cinnamon stick. Heat over medium until it starts to simmer.
  2. In a separate bowl, mix the cornstarch with a small amount of cold coconut milk to create a slurry. Once the mixture in the saucepan is simmering, remove the cinnamon stick and slowly whisk in the cornstarch slurry.
  3. Continue to cook the mixture, stirring constantly, until it thickens, about 5-7 minutes.
  4. Remove from heat and add the vanilla extract. Pour the mixture into two ramekins and let them cool to room temperature.
  5. Once cooled, refrigerate the ramekins for at least 2 hours to set.
  6. Before serving, sprinkle a thin layer of brown sugar on top of each custard.
  7. Using a kitchen torch or broiler, caramelize the sugar until it forms a crispy crust. Let it cool for a minute before serving.
