Ingredients
- coconut milk - 400 ml
- cornstarch - 40 g
- sugar - 80 g
- vanilla extract - 1 tsp
- lemon zest - 1 tsp
- orange zest - 1 tsp
- cinnamon stick - 1
- brown sugar - 2 tbsp
Steps
- In a saucepan, combine the coconut milk, sugar, lemon zest, orange zest, and the cinnamon stick. Heat over medium until it starts to simmer.
- In a separate bowl, mix the cornstarch with a small amount of cold coconut milk to create a slurry. Once the mixture in the saucepan is simmering, remove the cinnamon stick and slowly whisk in the cornstarch slurry.
- Continue to cook the mixture, stirring constantly, until it thickens, about 5-7 minutes.
- Remove from heat and add the vanilla extract. Pour the mixture into two ramekins and let them cool to room temperature.
- Once cooled, refrigerate the ramekins for at least 2 hours to set.
- Before serving, sprinkle a thin layer of brown sugar on top of each custard.
- Using a kitchen torch or broiler, caramelize the sugar until it forms a crispy crust. Let it cool for a minute before serving.
