Ingredients

  • Almond milk - 400 ml
  • Cornstarch - 40 g
  • Sugar - 60 g
  • Vanilla extract - 1 tsp
  • Lemon zest - 1 tsp
  • Cinnamon stick - 1
  • Brown sugar - 2 tbsp (for caramelizing)
  • Pinch of salt

Steps

  1. In a saucepan, combine almond milk, cornstarch, sugar, vanilla extract, lemon zest, cinnamon stick, and a pinch of salt.
  2. Whisk the mixture over medium heat until it begins to thicken, about 10-15 minutes, stirring constantly to prevent lumps.
  3. Once thickened, remove the cinnamon stick and pour the mixture into two ramekins. Allow to cool at room temperature.
  4. Refrigerate the ramekins for at least 2 hours to set.
  5. Before serving, sprinkle a thin layer of brown sugar on top of each crema.
  6. Using a kitchen torch, caramelize the sugar until it forms a crispy crust. If you don’t have a torch, broil in the oven for a few minutes, watching carefully to avoid burning.
  7. Let the caramelized tops cool for a couple of minutes before serving.
