Ingredients
- Almond milk - 400 ml
- Cornstarch - 40 g
- Sugar - 60 g
- Vanilla extract - 1 tsp
- Lemon zest - 1 tsp
- Cinnamon stick - 1
- Brown sugar - 2 tbsp (for caramelizing)
- Pinch of salt
Steps
- In a saucepan, combine almond milk, cornstarch, sugar, vanilla extract, lemon zest, cinnamon stick, and a pinch of salt.
- Whisk the mixture over medium heat until it begins to thicken, about 10-15 minutes, stirring constantly to prevent lumps.
- Once thickened, remove the cinnamon stick and pour the mixture into two ramekins. Allow to cool at room temperature.
- Refrigerate the ramekins for at least 2 hours to set.
- Before serving, sprinkle a thin layer of brown sugar on top of each crema.
- Using a kitchen torch, caramelize the sugar until it forms a crispy crust. If you don’t have a torch, broil in the oven for a few minutes, watching carefully to avoid burning.
- Let the caramelized tops cool for a couple of minutes before serving.
