  • Thyme - 2 teaspoons, fresh or 1 teaspoon dried
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon - 1, juiced
  • Vegetable broth - 200 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a small bowl, combine olive oil, minced garlic, rosemary, thyme, paprika, salt, black pepper, and lemon juice to create a marinade.
  3. Rub the marinade all over the lamb shoulder, ensuring it is well-coated. Let it marinate for at least 30 minutes at room temperature.
  4. In a large oven-safe pan, heat a little olive oil over medium heat and sear the lamb on all sides until browned, about 4-5 minutes per side.
  5. Once browned, pour the vegetable broth into the pan, cover it with aluminum foil, and transfer it to the preheated oven.
  6. Roast the lamb in the oven for about 1 hour, then remove the foil and roast for an additional 30 minutes to develop a crispy exterior.
  7. Check for doneness, and let it rest for 10 minutes before slicing.
  8. Serve the sliced lamb with the pan juices drizzled over the top.
