- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon - 1, juiced
- Vegetable broth - 200 ml
Steps
- Preheat the oven to 180°C (350°F).
- In a small bowl, combine olive oil, minced garlic, rosemary, thyme, paprika, salt, black pepper, and lemon juice to create a marinade.
- Rub the marinade all over the lamb shoulder, ensuring it is well-coated. Let it marinate for at least 30 minutes at room temperature.
- In a large oven-safe pan, heat a little olive oil over medium heat and sear the lamb on all sides until browned, about 4-5 minutes per side.
- Once browned, pour the vegetable broth into the pan, cover it with aluminum foil, and transfer it to the preheated oven.
- Roast the lamb in the oven for about 1 hour, then remove the foil and roast for an additional 30 minutes to develop a crispy exterior.
- Check for doneness, and let it rest for 10 minutes before slicing.
- Serve the sliced lamb with the pan juices drizzled over the top.
