Ingredients
- Lamb shoulder - 500 grams, cut into 2.5 cm cubes
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Paprika - 1 teaspoon
- Ground cumin - 1 teaspoon
- Fresh rosemary - 1 tablespoon, chopped
- Fresh thyme - 1 tablespoon, chopped
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Skewers - 4 (soaked in water for 30 minutes if wooden)
Steps
- In a bowl, combine olive oil, minced garlic, paprika, ground cumin, chopped rosemary, chopped thyme, lemon juice, salt, and black pepper to create a marinade.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
- Preheat your grill to medium-high heat, ensuring it's clean and well-oiled.
- Thread the marinated lamb cubes onto the soaked skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is cooked to your preferred level of doneness, ideally medium-rare.
- Remove from the grill and let rest for 5 minutes before serving. Enjoy your Cordero al Espeto with a side of grilled vegetables or a fresh salad.
