  • Lamb shoulder - 300 grams, cut into cubes
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, finely chopped
  • Red bell pepper - 1, diced
  • Tomato - 1 large, chopped
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Chickpeas - 100 grams, cooked
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. In a large skillet, heat olive oil over medium heat. Add the minced garlic and chopped onion, cooking until the onion is translucent, about 5 minutes.
  2. Add the diced red bell pepper and cook for another 5 minutes until softened.
  3. Increase the heat to medium-high, add the lamb cubes, and brown them on all sides for about 8-10 minutes.
  4. Stir in the chopped tomato, ground cumin, paprika, oregano, salt, and black pepper. Cook for an additional 5 minutes, allowing the flavors to meld.
  5. Pour in 200 ml of water, bring to a boil, then reduce the heat to low. Cover and let simmer for 20 minutes.
  6. Add the cooked chickpeas to the skillet, stir well, and cook for another 5 minutes until heated through.
  7. Remove from heat, stir in the lemon juice and chopped parsley before serving.
