- Lamb shoulder - 300 grams, cut into cubes
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Red bell pepper - 1, diced
- Tomato - 1 large, chopped
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Chickpeas - 100 grams, cooked
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and chopped onion, cooking until the onion is translucent, about 5 minutes.
- Add the diced red bell pepper and cook for another 5 minutes until softened.
- Increase the heat to medium-high, add the lamb cubes, and brown them on all sides for about 8-10 minutes.
- Stir in the chopped tomato, ground cumin, paprika, oregano, salt, and black pepper. Cook for an additional 5 minutes, allowing the flavors to meld.
- Pour in 200 ml of water, bring to a boil, then reduce the heat to low. Cover and let simmer for 20 minutes.
- Add the cooked chickpeas to the skillet, stir well, and cook for another 5 minutes until heated through.
- Remove from heat, stir in the lemon juice and chopped parsley before serving.
