  • Red bell pepper - 1, sliced
  • Zucchini - 1, sliced
  • Red onion - 1, cut into wedges

Steps

  1. In a large bowl, combine the olive oil, minced garlic, smoked paprika, cumin, chopped rosemary, lemon juice, salt, and black pepper to create a marinade.
  2. Cut the lamb shoulder into bite-sized pieces and add it to the marinade, mixing well to ensure all the pieces are coated. Cover and refrigerate for at least 30 minutes, ideally 2 hours.
