Ingredients

  • Rabbit - 500 grams, cut into pieces
  • Olive oil - 4 tablespoons
  • Garlic - 6 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • White wine - 100 ml
  • Bay leaves - 2
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the rabbit pieces to the skillet, season with salt and black pepper, and brown them on all sides for about 10 minutes.
  3. Remove the rabbit from the skillet and set aside.
  4. In the same skillet, add the minced garlic and sauté until fragrant, about 1-2 minutes, being careful not to burn it.
  5. Return the rabbit to the skillet, add the white wine, bay leaves, and red pepper flakes (if using).
  6. Cover the skillet and simmer on low heat for about 30 minutes, or until the rabbit is tender.
  7. Stir in the fresh parsley just before serving, and adjust seasoning if necessary.
