Ingredients
- Canned coconut milk - 200 ml
- Eggs - 2 large
- Erythritol - 40 g
- Vanilla extract - 1 tsp
- Unsweetened shredded coconut - 30 g
- Butter - 1 tbsp
- Salt - a pinch
Steps
- Preheat the oven to 160°C (320°F).
- In a mixing bowl, whisk together the eggs, erythritol, and a pinch of salt until well combined.
- Add the canned coconut milk and vanilla extract to the egg mixture, and whisk until smooth.
- Stir in the unsweetened shredded coconut until evenly distributed.
- In a small saucepan, melt the butter over medium heat, then add the mixture from the bowl and stir well for 2-3 minutes to slightly thicken.
- Pour the mixture into two ramekins or small oven-safe dishes.
- Place the ramekins in a baking dish and fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for 30-35 minutes, or until the flan is set but still slightly jiggly in the center.
- Remove from the oven and let cool at room temperature for 10 minutes, then refrigerate for at least 2 hours before serving.
- To serve, carefully run a knife around the edges of the flan, invert onto a plate, and garnish with additional shredded coconut if desired.
