Ingredients
- Chickpeas - 200 grams, soaked overnight
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Potato - 1 medium, diced
- Spinach - 100 grams, fresh
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Bay leaf - 1
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat and add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
- Add the diced carrot, red bell pepper, and potato to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the soaked chickpeas, diced zucchini, paprika, bay leaf, salt, and black pepper. Mix well to combine all ingredients.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let simmer for 20 minutes.
- After 20 minutes, add the fresh spinach to the pot and stir until wilted, about 2-3 minutes.
- Remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
