Ingredients

  • Chickpeas - 200 grams, soaked overnight
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Potato - 1 medium, diced
  • Spinach - 100 grams, fresh
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Bay leaf - 1
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat and add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
  2. Add the diced carrot, red bell pepper, and potato to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Stir in the soaked chickpeas, diced zucchini, paprika, bay leaf, salt, and black pepper. Mix well to combine all ingredients.
  4. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let simmer for 20 minutes.
  5. After 20 minutes, add the fresh spinach to the pot and stir until wilted, about 2-3 minutes.
  6. Remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
