  • Carrot - 1 large, sliced
  • Celery - 1 stalk, diced
  • Potato - 1 medium, diced
  • Canned tomatoes - 400 grams, crushed
  • Vegetable broth - 500 ml
  • Nori seaweed - 1 sheet, torn into pieces
  • Smoked paprika - 1 teaspoon
  • Saffron - a pinch
  • Chickpeas - 100 grams, cooked
  • Green peas - 100 grams, frozen
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat and add the minced garlic, diced onion, and bell pepper. Sauté for about 5 minutes until the onions are translucent.
  2. Add the sliced carrot, diced celery, and diced potato to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Stir in the crushed tomatoes, vegetable broth, torn nori seaweed, smoked paprika, and saffron. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes.
  4. After 20 minutes, add the cooked chickpeas and frozen green peas. Cook for an additional 5-7 minutes until the peas are heated through.
  5. Season the stew with lemon juice, salt, and black pepper to taste. Stir well and remove from heat.
  6. Serve hot, garnished with fresh parsley.
