- Carrot - 1 large, sliced
- Celery - 1 stalk, diced
- Potato - 1 medium, diced
- Canned tomatoes - 400 grams, crushed
- Vegetable broth - 500 ml
- Nori seaweed - 1 sheet, torn into pieces
- Smoked paprika - 1 teaspoon
- Saffron - a pinch
- Chickpeas - 100 grams, cooked
- Green peas - 100 grams, frozen
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat and add the minced garlic, diced onion, and bell pepper. Sauté for about 5 minutes until the onions are translucent.
- Add the sliced carrot, diced celery, and diced potato to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the crushed tomatoes, vegetable broth, torn nori seaweed, smoked paprika, and saffron. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes.
- After 20 minutes, add the cooked chickpeas and frozen green peas. Cook for an additional 5-7 minutes until the peas are heated through.
- Season the stew with lemon juice, salt, and black pepper to taste. Stir well and remove from heat.
- Serve hot, garnished with fresh parsley.
