- Chickpeas - 200 grams (soaked overnight)
- Carrot - 1 large, diced
- Potato - 1 medium, diced
- Zucchini - 1 medium, diced
- Green beans - 100 grams, chopped
- Cabbage - 100 grams, shredded
- Tomato - 1 medium, diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Olive oil - 2 tablespoons
- Vegetable broth - 750 ml
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the diced carrot, potato, and zucchini to the pot. Cook for about 5 minutes, stirring occasionally.
- Stir in the chopped green beans, shredded cabbage, and diced tomato. Cook for another 5 minutes.
- Add the soaked chickpeas, vegetable broth, paprika, cumin, bay leaf, salt, and black pepper. Bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 30-35 minutes, or until the chickpeas are tender.
- Remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
