Ingredients

  • Chickpeas - 200 grams (soaked overnight)
  • Carrot - 1 large, diced
  • Potato - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Green beans - 100 grams, chopped
  • Cabbage - 100 grams, shredded
  • Tomato - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Olive oil - 2 tablespoons
  • Vegetable broth - 750 ml
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  2. Add the diced carrot, potato, and zucchini to the pot. Cook for about 5 minutes, stirring occasionally.
  3. Stir in the chopped green beans, shredded cabbage, and diced tomato. Cook for another 5 minutes.
  4. Add the soaked chickpeas, vegetable broth, paprika, cumin, bay leaf, salt, and black pepper. Bring to a boil.
  5. Reduce the heat to low, cover the pot, and let it simmer for about 30-35 minutes, or until the chickpeas are tender.
  6. Remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
