  • Chickpeas - 150 grams (soaked overnight)
  • Potatoes - 200 grams, peeled and diced
  • Carrots - 100 grams, sliced
  • Green cabbage - 100 grams, chopped
  • Red bell pepper - 1 medium, diced
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Bay leaf - 1
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
  3. Add the diced red bell pepper, sliced carrots, and diced potatoes to the pot. Stir for about 5 minutes.
  4. Add the soaked chickpeas, chopped cabbage, vegetable broth, paprika, cumin, bay leaf, salt, and black pepper. Bring to a boil.
  5. Once boiling, reduce the heat and let it simmer for 30 minutes, until the vegetables and chickpeas are tender.
  6. Remove the bay leaf and transfer the mixture to a baking dish.
  7. Cover with aluminum foil and bake in the preheated oven for 15 minutes to allow the flavors to meld.
  8. Remove from the oven, garnish with fresh parsley, and serve hot.
