- Chickpeas - 150 grams (soaked overnight)
- Potatoes - 200 grams, peeled and diced
- Carrots - 100 grams, sliced
- Green cabbage - 100 grams, chopped
- Red bell pepper - 1 medium, diced
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Bay leaf - 1
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Add the diced red bell pepper, sliced carrots, and diced potatoes to the pot. Stir for about 5 minutes.
- Add the soaked chickpeas, chopped cabbage, vegetable broth, paprika, cumin, bay leaf, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat and let it simmer for 30 minutes, until the vegetables and chickpeas are tender.
- Remove the bay leaf and transfer the mixture to a baking dish.
- Cover with aluminum foil and bake in the preheated oven for 15 minutes to allow the flavors to meld.
- Remove from the oven, garnish with fresh parsley, and serve hot.
