- Chickpeas - 200 grams (soaked overnight)
- Carrots - 2 medium, diced
- Potatoes - 2 medium, cubed
- Green beans - 100 grams, trimmed and cut
- Cabbage - 200 grams, chopped
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Tomato - 1 medium, diced
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Bay leaf - 1
- Vegetable broth - 1 liter
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the diced carrots and cubed potatoes to the pot, cooking for about 5 minutes, stirring occasionally.
- Stir in the diced tomato, smoked paprika, bay leaf, salt, and black pepper, cooking for another 2 minutes.
- Add the soaked chickpeas and vegetable broth to the pot, bringing it to a boil.
- Once boiling, reduce the heat to low and let it simmer for 30 minutes, adding more broth or water if needed.
- After 30 minutes, add the chopped cabbage and green beans to the pot, cooking for an additional 10 minutes until all vegetables are tender.
- Taste and adjust seasoning if necessary, then remove the bay leaf before serving.
- Serve hot, garnished with fresh parsley.
