Ingredients

  • Chickpeas - 200 grams (soaked overnight)
  • Carrots - 2 medium, diced
  • Potatoes - 2 medium, cubed
  • Green beans - 100 grams, trimmed and cut
  • Cabbage - 200 grams, chopped
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Tomato - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Bay leaf - 1
  • Vegetable broth - 1 liter
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  2. Add the diced carrots and cubed potatoes to the pot, cooking for about 5 minutes, stirring occasionally.
  3. Stir in the diced tomato, smoked paprika, bay leaf, salt, and black pepper, cooking for another 2 minutes.
  4. Add the soaked chickpeas and vegetable broth to the pot, bringing it to a boil.
  5. Once boiling, reduce the heat to low and let it simmer for 30 minutes, adding more broth or water if needed.
  6. After 30 minutes, add the chopped cabbage and green beans to the pot, cooking for an additional 10 minutes until all vegetables are tender.
  7. Taste and adjust seasoning if necessary, then remove the bay leaf before serving.
  8. Serve hot, garnished with fresh parsley.
