Ingredients

  • Chickpeas - 100 grams (soaked overnight)
  • Beef shank - 150 grams
  • Pork belly - 100 grams
  • Chorizo sausage - 100 grams
  • Carrot - 1 medium, chopped
  • Potato - 1 medium, diced
  • Savoy cabbage - 200 grams, chopped
  • Onion - 1 medium, halved
  • Garlic - 2 cloves, minced
  • Bay leaf - 1
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 1.5 liters

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the halved onion and minced garlic, sautéing until fragrant.
  2. Add the beef shank and pork belly to the pot, browning them on all sides for about 5-7 minutes.
  3. Add the soaked chickpeas, water, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 1 hour.
  4. After 1 hour, add the chorizo, carrot, potato, and cabbage to the pot. Stir well and continue to simmer for an additional 30 minutes or until all ingredients are tender.
  5. Remove from heat and let it sit for a few minutes before serving. Serve hot, optionally with a drizzle of olive oil on top.
