- Chickpeas - 100 grams (soaked overnight)
- Beef shank - 150 grams
- Pork belly - 100 grams
- Chorizo sausage - 100 grams
- Carrot - 1 medium, chopped
- Potato - 1 medium, diced
- Savoy cabbage - 200 grams, chopped
- Onion - 1 medium, halved
- Garlic - 2 cloves, minced
- Bay leaf - 1
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Water - 1.5 liters
Steps
- In a large pot, heat the olive oil over medium heat. Add the halved onion and minced garlic, sautéing until fragrant.
- Add the beef shank and pork belly to the pot, browning them on all sides for about 5-7 minutes.
- Add the soaked chickpeas, water, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 1 hour.
- After 1 hour, add the chorizo, carrot, potato, and cabbage to the pot. Stir well and continue to simmer for an additional 30 minutes or until all ingredients are tender.
- Remove from heat and let it sit for a few minutes before serving. Serve hot, optionally with a drizzle of olive oil on top.
