- Pork belly - 150 grams
- Chorizo - 100 grams
- Carrots - 2 medium, chopped
- Potatoes - 2 medium, cubed
- Cabbage - 200 grams, chopped
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Bay leaves - 2
- Water - 1 liter
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened.
- Add the chicken thighs and pork belly to the pot, browning them on all sides for about 5-7 minutes.
- Stir in the smoked paprika, salt, and pepper, coating the meat evenly.
- Add the chopped carrots, cubed potatoes, and bay leaves. Pour in 1 liter of water to cover the ingredients.
- Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for 45 minutes.
- After 45 minutes, add the chopped cabbage and sliced chorizo to the pot. Simmer for an additional 30 minutes, until all vegetables are tender and flavors meld.
- Remove the bay leaves before serving. Adjust seasoning if necessary and serve hot.
