Ingredients

  • Chicken thighs - 300 grams
  • Pork belly - 150 grams
  • Chorizo - 100 grams
  • Carrots - 2 medium, chopped
  • Potatoes - 2 medium, cubed
  • Cabbage - 200 grams, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Bay leaves - 2
  • Water - 1 liter

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened.
  2. Add the chicken thighs and pork belly to the pot, browning them on all sides for about 5-7 minutes.
  3. Stir in the smoked paprika, salt, and pepper, coating the meat evenly.
  4. Add the chopped carrots, cubed potatoes, and bay leaves. Pour in 1 liter of water to cover the ingredients.
  5. Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for 45 minutes.
  6. After 45 minutes, add the chopped cabbage and sliced chorizo to the pot. Simmer for an additional 30 minutes, until all vegetables are tender and flavors meld.
  7. Remove the bay leaves before serving. Adjust seasoning if necessary and serve hot.
