- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until translucent, about 3-4 minutes.
- Add the diced zucchini, sliced carrot, diced red bell pepper, and cubed potato to the pot. Stir well and cook for another 5 minutes, allowing the vegetables to soften slightly.
- Sprinkle in the paprika, salt, and black pepper, mixing thoroughly with the vegetables.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and simmer for about 25 minutes, or until the vegetables are tender.
- Remove from heat and stir in the fresh parsley and lemon juice just before serving. Adjust seasoning if necessary.
