  • Potato - 200 grams, cubed
  • Onion - 50 grams, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until translucent, about 3-4 minutes.
  2. Add the diced zucchini, sliced carrot, diced red bell pepper, and cubed potato to the pot. Stir well and cook for another 5 minutes, allowing the vegetables to soften slightly.
  3. Sprinkle in the paprika, salt, and black pepper, mixing thoroughly with the vegetables.
  4. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and simmer for about 25 minutes, or until the vegetables are tender.
  5. Remove from heat and stir in the fresh parsley and lemon juice just before serving. Adjust seasoning if necessary.
